Tuna Cakes

Description:
You will most likely have all the ingredients needed in your fridge and pantry for this recipe which makes it a perfect go to meal.

Ingredients:
1 can (7 1/2 oz.) tuna
1 Tbsp. finely minced onion
1/4 c. mayonnaise
1 egg, slightly beaten
2 Tbsp. lemon juice
1/4 tsp. salt & a little pepper
1 1/2 c. soft bread crumbs, divided in half
1 Tbsp. butter
1 Tbsp. oil

Directions:
Drain tuna and chop coarsely.
Combine tuna, onion, mayonnaise, egg, lemon juice, salt, pepper and 3/4 cup bread crumbs in bowl.
Mix well. Divide into 3 portions.
Roll each portion in remaining bread crumbs and form into 3 patties.
Refrigerate 1 hour.
Heat butter and oil in skillet over medium heat, cook cakes 3 to 4 minutes on each side until golden brown.
Serve with tartar sauce
