Oatmeal Raisin Crunch Bar

Description:
A combination of oatmeal, raisins and cereal make a quick and tasty snack!

Ingredients:
1 2/3 cups regular rolled oats
1 cup Special K cereal (or another rice cereal)
1/3 cup oat flour (or 1/3 cup oats, processed till ground in a food processor)
1/2 teaspoon salt
2 teaspoons ground cinnamon
3/4 cup raisins (or substitute any dried fruits and nuts u like)
1 1/2 teaspoon vanilla
6 tablespoons melted butter
1/3 cup muscavado sugar or gula Melaka (or regular brown sugar)
1/3 cup honey

Directions:
1. Preheat to 350F.
2. Melt butter on low heat in a saucepan.
3. In a mixing bowl combine oatmeal, oat flour, salt, cinnamon, raisins and cereal (make sure to crush the cereal if the flakes are too big). Set aside.
4. Once butter is melted, turn off heat. Add sugar, vanilla and honey to sauce pan. Stir to mix
5. Add butter mixture to dry oatmeal mix. Combine well.
6. Pour into a 13in x 9in pan. Spread evenly.
7. Use parchment paper or foil to press oatmeal mixture down. Press firm so that it will stick together.
8. Place in oven for 20 minutes or until golden brown.
9. Remove from oven. Leave out to cool or place in fridge to hasten the cool off.
10. Once cooled, cut into bar shapes.
