Sliced and Seasoned Red Potatoes

Description:
Adapted from Yahoo! Shine's recipe article "A Tastier – and Prettier! – Alternative to Baked Potatoes", this easy to bake potato adds simple delicious flavor and makes for a pretty side dish.

Ingredients:
8 large red potatoes
2 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1 tablespoon chopped fresh parsley leaves
1 teaspoon chopped fresh thyme leaves

Directions:
1. Preheat oven to 450 degrees F.
2. Carefully slice each potato thinly without cutting all the way through.
3. Place potatoes on metal baking pan.
4. Carefully drizzle oil between slices.
5. Combine salt, pepper, parsley and thyme.
6. Sprinkle with seasonings.
7. Roast in oven for 45 minutes or until lightly browned.
