Fried Chicken

Fried chicken - where a messy kitchen and greasy fingers makes a delicious meal!

6-8 chicken legs
1 cups flour
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
2 tsp turmeric
1 cup buttermilk
Sunflower oil

(alternatively, you can use 1 1/2 cup flour for 16 little drummets)

1. Combine the salt, flour, black pepper, and cayenne in a large, shallow bowl.
2. Roll each chicken piece in the flour mixture, shaking off the excess. Set aside for about 15 minutes.
3. Heat up your deep fryer or a deep pan on the stove. If using a deep pan, make sure it is enough to cover the chicken (maybe 4 inches or so). Add in sunflower oil.
4. Pour the buttermilk into a second shallow bowl.
5. Dip the chicken in the buttermilk, then again in the flour mixture.
6. Once oil is hot enough, carefully place the chicken in the oil, using tongs. (Add the pieces slowly, so that the temperature does not drop, and work in batches to avoid overcrowding.)
7. Fry the chicken until golden brown, turning once after 10 to 20 minutes, depending on the size of the pieces.
8. Check to see if chicken is cooked by piercing the meat; the juices should run clear.
9. Drain the chicken on paper towels.
