Seasoned Eggs Potatoes Greens and Meat

Description:
This is UmmAbdallah's unique concoction of breakfast foods all rolled into one big happy plate.

Ingredients:
4 eggs
1 large potato
1 stalk of dark greens (have your pick: mustard, collard, spinach, etc.)
1 package of breakfast beef
1 chopped red pepper
1 chopped green pepper
1 chopped yellow pepper
1 chopped onion
3 tsp turmeric
salt
pepper
sunflower oil (or any other frying oil)

Directions:
1. Peel and cut potato into 1 inch cubes
2. Heat a sauce pan with 2 inches of oil
3. When oil is hot enough, throw in 1/3 of each: onion, red pepper, green pepper and yellow pepper, as well as 1 tsp turmeric
4. Once onion and peppers begin to brown, add in potatoes even out in pan. (Remember to stir throughout the following steps so they don't stick and they evenly cook)
5. In a separate sauce pan, heat 1 tablespoon of oil on medium heat.
6. Add in breakfast beef and cook until brown; remove and place on paper towel to drain oil.
7. Check potatoes. If you can stick a fork in one and it is soft, then remove potatoes using a spatula and place on a paper towel to drain oil.
8. In the same pan the meat was cooked in, add 2 tablespoons oil. Add in 1/3 chopped onion, red, pepper, green pepper, yellow pepper and 1 tsp tumeric.
9. Wash and chop greens.
10. Once onion and peppers have browned, add in greens. Add in salt and pepper (as much as you like). Toss and fold until greens are soft. Remove from heat and place on a plate.
11. In the same pan, add 2 tablespoons oil. Add in 1/3 chopped onion, red, pepper, green pepper, yellow pepper and 1 tsp tumeric.
12. In a separate bowl, crack eggs into it and stir to mix.
13. Once onion and peppers have browned, add in eggs. Add in salt and pepper (as much as you like). Prepare them like normal scrambled eggs (stir and cook until done)
14. Once eggs are done, remove from heat and place on a plate.
15. Layer greens on top, then potatoes, then meat.
16. Serve hot.
