Simple Granola Mix

Description:
This is a simple granola mix I use a base mix. Everyone in my family prefers different nuts, dried fruits or seeds, so I can add those in separately before serving.

Ingredients:
3 cups regular (not instant) rolled oats
1/3 cup muscavado sugar or gula melaka (or just brown sugar)
1 1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/3 cup honey
3 tablespoons virgin coconut oil (or regular oil if u don't have coconut oil)
5 tablespoons melted butter
2 teaspoons vanilla extract
1 tablespoon dessicated coconut
1/2 cup almond flakes
cinnamon sugar (optional) (feel free to add additional dried fruit, nuts or seeds as you please)
1 cup Special K cereal or another crispy rice cereal (optional, but I like the extra crunch it adds to the mix - if you add this in, just increase the amount of butter and sugar by 1 tablespoon each)

Directions:
1. Preheat oven to 320F
2. In a mixing bowl, mix oatmeal, brown sugar, cinnamon, salt in a bowl
3. On stove, heat butter, then add in vanilla, honey and oil
4. Combine butter mix with dry oatmeal mix
5. Spread in long baking pan and cook for 10-15 minutes, stirring occasionally
6. Add almonds (and/or any other nuts u like) stir and cook for 5-10 minutes or until golden brown
7. Take out, add other nuts, dried fruits or seeds, stir and sit out to cool.
8. Sprinkle over cinnamon sugar. Once cool, it'll get crunchy. U can also put it in the fridge to hasten the cool off.
