Apple Pie Cups

Serves: 6 mini apple pie cups

Dessert, Kid Friendly,

This apple pie recipe is delicious! It was a big hit with the family. Although it takes a bit of prep time, it's well worth it. This recipe will only make 6 apple pie cups so I recommend you double or triple the recipe and freeze whatever is extra of filling and dough for future use. It's much easier that way.

For the dough:

1 cup flour
6 tablespoons butter, cold and cubed
2 tablespoons (or a little more) ice water
1 tsp salt
1 tsp sugar

For the filling:

2 to 3 large apples (Fuji apples are the best)
1/4 cup sugar
1/4 cup brown sugar
1 tsp cinnamon
pinch of salt
1 tablespoon flour
1 tsp vanilla extract

1. Make the dough:
Cut your butter into small cubes. Using a mixing bowl and a fork, mix butter into the flour. I’m sure a food processor would make this easier, but I did it by hand, and it worked! Next, add salt and sugar. Then add your ice water and mix well until a dough forms. Start with the 2 tablespoons of ice water, and if it isn’t coming together like a dough, start adding a little bit more at a time. Wrap dough in saran wrap and leave in the fridge for 30 minutes.

2. Cut up your apples:
Peel and dice or chop 2 or 3 apples.

3. Make the cinnamon sugar mixture:
Mix together the sugar, brown sugar, cinnamon, salt, flour, and vanilla extract. Then, mix in your chopped apples.

4. Make apple pie cups and fill with apple mixture:
Remove dough from fridge. Using two pieces of parchment paper, place 3/4 of the dough inside the two pieces and use a rolling pin to roll out the dough. Roll it out fairly thin. Use a bowl that’s larger than the size of your cupcake tin circles to cut out circles from the dough. Squish these into an ungreased cupcake tin, removing any extra from the top. Use a fork to poke holes at the bottom of each cup, and then fill to the top with your apple mixture.

5. Make the apple pie lattice top:
Using the remaining 1/4 of dough, roll out a rectangle. Then, cut out small strips, the diameter of your cupcake cups. Use these to create the lattice work top over the mini apple pies.

6. Bake the apple pies:
Place the cupcake tin on a baking sheet and bake at 200 degree Celsius for about 35 minutes, or until they start to look brown on the top, and your whole kitchen smells like apple pie!
