Greek Pasta Salad

Description:
The combination of vegetables, pasta and vinaigrette makes an easy tasty meal or potluck dish.

Ingredients:
For the pasta salad:
2 1/2 cups pasta
1/2 large onion, sliced
1/2 large cucumber, diced
1/2 cup green pepper, diced
3/4 cup black olives, sliced
20 cherry tomatoes
1 cup feta cheese, cubed

For the vinaigrette:
1/2 cup olive oil
2 tablespoons apple cider vinegar
2 teaspoons freshly squeezed lemon juice
2 teaspoons dried oregano
2 garlic cloves, minced
1 teaspoon sugar
salt and pepper (adjust to taste)

Directions:
1. Boil the pasta as per package instructions, drain and then let cool.
2. Prepare the vinaigrette by mixing the ingredients.
3. Cut the vegetables.
4. Combine pasta and vegetables by tossing together.
5. Stream in vinaigrette while gently tossing.
6. Add feta cheese.
7. Refrigerate for a few hours to marinate flavour.
