Chewy Cranberry and Walnut Oatmeal Cookies

Description:
Chewy oatmeal cookies can go with a variety of dried fruits, nuts and seeds. These chewy cookies are a buttery delight with cranberry and walnut.

Ingredients:
1/2 cup softened butter
1/2 cup brown sugar
1/2 cup white sugar
2 teaspoons vanilla flavour
1 egg
1 and 1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 and 1/2 cups rolled oats
1/3 cup cranberries*
1/3 cup walnuts*
(* or your choice of dried fruits, nuts or seeds)

Directions:
1. Preheat oven to 160C.
2. In a mixing bowl, combine the butter, brown sugar and white sugar.
3. Add in the egg and vanilla flavour and mix well.
4. In a separate bowl, combine the flour, salt, baking powder and baking soda.
5. Combine the flour mixture into the butter/sugar/egg/vanilla mix.
6. Fold in the rolled oats.
7. Fold in the cranberries and walnuts (or other dried fruits, nuts or seeds you selected).
8. Lightly coat your baking pan with oil or use parchment paper.
9. Place heaping scoops of the batter onto the baking pan, giving 2 inches or so space between them.
10. Bake 8-10 minutes or until you see the cookie start to turn a light brown.
11. Remove from oven and let it cool before serving.
